2021 Field Blend

Variety – Field Blend 
Aroma – Mulberry, lavender, bramble & liquorice
Palate – Seamless, supple & complete. Bright, juicy, fleshy & concentrated. Intensely flavoured with a dense core of dark, plush fruit. 

It’s very rare that we have three varieties ripen at the same time – this happened in March of 2021 so of course we took the opportunity to ferment them together.Equal volumes of Shiraz, Cabernet Sauvignon and Merlot were harvested on the same day from our single site vineyard. Now to mix things up even further we decided to do two different fermentation methods. One using 100% whole bunch, hand-picked fruit, and the other being fully de-stemmed through a selective harvester. This is a wine we certainly won’t be able to make every year.
